INGREDIENTS
Cooked Ground Beef (seasoned with taco seasoning) – I use 96 / 4 ground beef in this recipe. The leaner the beef the better. If you don’t have taco seasoning you can season with onion powder, salt, black pepper and chili powder.
Protein Chips – I use quest protein chips in this recipe, if you can’t find them you can use tortilla chips instead but because this is a main protein source, the recipe will be lower in protein and the calories will be a bit higher as the protein chips are low fat and low carb. I use the chili lime flavor and Jesse loves the loaded taco flavor
Diced Tomatoes – you can use pico de gallo but I just happen to have tomatoes on hand or if you hate tomatoes you could also use bell peppers instead.
Red Onion or yellow onion – If you use pico de gallo you can skip this.
Jalapeños – If you don’t have these or just don’t like the heat you can leave these out.
Fat Free Shredded Cheddar Cheese – if you wash it first, it melts a bit better!
Light Sour Cream
Queso Dip or Tostitos Salsa Con Queso
Optional: Black beans. Personally I don’t think they are needed but I’m listing it as an option because I know a lot of people love beans in their loaded nachos.
HOW TO MAKE PROTEIN NACHOS
Season ground beef with taco seasoning and cook on medium-high heat in a large skillet until browned. Set aside.
Pre-heat your oven to 350F.
On a small baking sheet lay chips in a single layer, top with ground beef, diced tomatoes, Onions, jalapenos and shredded cheese.
Bake in the over for 10 minutes.
Remove from oven, top with queso and light sour cream.
The chips will be a little crispy at this point – if you wan them to be soft transfer the nachos to a microwave safe container and pop in the microwave for 30 seconds.
WHAT ARE THE CALORIES / MACROS?
These protein nachos make the perfect snack, the prep time is minimal and the macros are WILD.

Carbs: 10 grams of carbs
Fat: 12 grams of fat
Protein: 60 grams of protein.

1 bag Protein Chips
1 tbsp Diced Tomatoes (12g)
1 tbsp Red onion or yellow onion, diced (4g)
1/2 Jalapeños Pepper (10g)
1/4 cup Fat Free Shredded Cheddar Cheese (28g)
1 tbsp Light sour cream (12g)
1 tbsp Queso Dip

- Season ground beef with taco seasoning and cook on medium-high heat in a large skillet until browned. Set aside.
