Do I have to make my own dip?
You can make your own buffalo chicken dip or just use a store bought one. Mine are a little lower calorie but in terms of time spent – it’s small potatoes in the calorie differences.
If you want to use store bought dip I would recommend bulking it up with either precooked rotisserie chicken or cooking up and shredding some chicken to add into it.
Where do I find egg roll wraps?
Most of the time these will be in the vegan / vegetarian section of your local grocery store near the produce section. We have been able to find the nasoya egg roll wraps at publix, target and walmart so far.
How do I close an egg roll?
Follow the chart below and you’ll be a rockstar! I recommend making a “paste” out of flour and water, you’ll use this on any contact point you want to stay sealed. Alternatively you can just use water but I find the flour/ water paste really seals everything in and prevents leaking.
Ingredients:
- 800g Uncooked Chicken Thighs
- Adobo Seasoning
- 15g (1 tbsp) Light Mayonnaise
- 30g Light Sour Cream
- 113g (4oz) Reduced Fat Cream Cheese
- 200g (7oz) Franks Mild Buffalo Sauce
- 56g Shredded Mozzarella
Instructions:
- In a pan on medium heat cook chicken thighs seasoned with adobo, shred once cooked.
- Preheat your air fryer to medium high heat (400°F).
- In a bowl, mix together the cooked chicken, light mayo, sour cream, cream cheese, mild buffalo sauce and shredded Mozzarella
- Lay a wonton wrapper on a cutting board or flat surface and place about 75g of the chicken mixture in the center of the egg roll wraps
- Fold the wrapper tightly around the chicken mixture using my instructions above, sealing the edges with a paste made of water & flour. Repeat with the remaining wrappers and chicken mixture.
- Lightly spray the inside of your air fryer with oil, for a crispier egg roll give the egg rolls a light spritz too
- Place the egg rolls in the air fryer basket and cook for 8-10 minutes flipping half way through or until they are golden brown.
Tip: If you don’t have an air fryer, you can also bake these egg rolls in a traditional oven. Simply preheat the oven to 425°F and place the egg rolls on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown. Also be sure to let these cool for a bit they have an extremely hot filling when coming out of the oven or air fryer.
These baked buffalo chicken egg rolls are a great alternative to traditional fried egg rolls, and the wonton wrappers provide a crispy texture without all the added fat. I wouldn’t recommend using rice wrappers, spring roll wrappers or wheat flour for a different texture. If you’re feeling adventurous, try making apple pie egg rolls, Chinese egg rolls, southwest egg rolls, breakfast egg rolls or even pork egg rolls for a fun twist on the classic.
Store any leftover egg rolls in an airtight container in the fridge for up to 2 days. Reheat in the oven or air fryer until crispy.
