No Bake Peanut Butter Cereal Bars

Ingredients:

  • Light Margarine (56g)
  • Peanut Butter (You could also use nut butters or almond butter if you have a peanut allergy in your household!)
  • 6 ounces mini marshmallows
  • 7 cups frosted flakes (you could also use corn flakes instead!)
  • Jet Puffed Marshmallow bits (for topping)
  • Optional: PB2 – for drizzling
No Bake Peanut Butter Cereal Bars

Instructions:

1. Line the bottom and sides of an 8-inch square baking dish with parchment paper, leaving an overhang on two sides.

2. In a large mixing bowl pour in frosted flakes and set aside.

3. In a medium saucepan over low to medium heat, combine the peanut butter, mini marshmallows and light margarine. Stir frequently until everything has melted together.

4. Pour the peanut butter marshmallow mixture over the frosted flakes and stir until the cereal is evenly coated.

5. Transfer the mixture to the prepared baking dish and press down firmly with your rubber spatula, press mixture firmly enough to make sure everything sticks together but not firm enough to crush everything together.

6. Top with jet puffed marshmallow bits. (optionally you can mix PB2 with water and drizzle it over the top for extra peanut butter flavor!)

7. Allow the bars to cool to room temperature for at least 1 hour. Do not set these in the refrigerator as they will likely become too hard.

8. Remove the bars from the baking dish using the overhang of parchment paper and cut them into smaller pieces.

9. Store the bars in an airtight container.

I made these but my No Bake Peanut Butter Cereal Bars aren’t gooey? What gives?

You’ll need to make sure you don’t accidentally caramelize the marshmallows while melting them down. I recommend taking extra time and heating them over low heat until they are just melted. Another reason they might not be gooey is if you put them in the fridge. This will cause the marshmallow to harden a bit too much. You’ll get the best results letting your no bake peanut butter cereal bars sit at room temperature.

  • 3 1/3rd cups mini marshmallows (170g)

  • 7 cups frosted flakes (260g)

  • 2 tbsp Jet Puffed Marshmallow bits (5g)
