Crumbl Cookie’s Key Lime Pie Cookie is a delightful treat that has gained a lot of popularity among cookie enthusiasts. The cookie is known for its unique flavor that blends sweet and tangy notes to create a delicious balance. This Crumbl Cookie Copycat recipe has been one of my most requested.

Key Lime Pie Crumbl Cookie

The only negative about crumbl cookies’ key lime pie cookie is the calorie count. The Key Lime Pie Cookie is 560 calories from crumbl. That is 1/3rd of most people’s daily calorie allotment (or more!). Don’t fret, This lower calorie version cuts the calories almost in half and doesn’t compromise any of the flavor.

This has been one of my most requested crumble cookie copy cat recipes and I would put it as one of my top three favorite copycat cookies I’ve done so far! Here are some of my other favorites:

Ingredients

FOR THE KEY LIME PIE COOKIE

  • Light margarine (I use “I can’t believe it’s not butter light” spread but any light margarine will work)
  • Granulated Sugar
  • Light Brown Sugar (Regular brown sugar works too!)
  • Egg
  • Vanilla Extract
  • Butter Extract
  • All Purpose Flour
  • Baking Powder
  • Baking Soda
  • Salt
  • Finely Crumbled Graham Crackers – I used cinnamon graham crackers because I had them on hand, Use whichever you have on hand.

FOR THE KEY LIME PIE FILLING

  • Fat Free Condensed Milk
  • Reduced Fat Cream Cheese
  • Lime Juice (I use 4-5 fresh key limes but if you only have regular limes use those instead!)

DIRECTIONS

MAKING THE COOKIE

Combine margarine, granulated sugar and brown sugar until creamy.

Add in the egg, vanilla extract and butter extract.

Add in all purpose flour, baking powder, salt and half of the crumbled graham crackers. Mix until combined.

Use a scooper or a spoon to scoop the dough into graham cracker crust, you should be able to get 6 balls.

***SUPER IMPORTANT*** This dough is WET. You’ll think you messed up here because the dough is too watery. Use a cookie scooper, scoop the dough into the graham cracker and spoon it on top of the cookie dough. You’ll be able to handle it with your hands once coated.

Put cookies on a prepared baking sheet evenly spaced. Use the back of a tablespoon to press an indentation into the center of the cookies. This will be where the filling goes after they are baked.

Bake for 10 minutes at 350F, At the 10 minute mark pull the cookies and make another indent this time using a 1/4th measuring cup, place back in the oven for 1-2 minutes. Let cookies cool on the baking sheet for 10-15 minutes. Once cooled move to a wire rack.

MAKING THE KEY LIME PIE FILLING

Combine fat free condensed milk, reduced fat cream cheese and the juice of 4-5 key limes. whisk together until fully combined.

Add 1-2 tbsp of filling to the center of each cookie. Top with graham cracker crumbles and a key lime slice for garnish.

The easiest and tastiest way to have crumbl cookies at home for half the calories. These cookies pack 100% of the flavor of crumbl cookies’ key lime pie cookie. For only 356 calories a cookie you can feel great about making these any day of the week!

Ingredients

  • FOR THE COOKIE
  • 1/2 cup Light Margarine (113g)

  • 1/3 cup Granulated Sugar (75g)

  • 1/4 cup Light Brown Sugar (50g)

  • 1 Egg

  • 1 tsp Vanilla Extract (5g)

  • 1 tsp Butter Extract (2g)

  • 1 1/4th cup All Purpose Flour (150g)

  • 1/4 tsp Baking Powder (1.5g)

  • 1/2 tsp Baking Soda (2g)

  • 1/2 tsp Salt (2g)

  • 6 Full Sheets Graham Crackers (finely crumbled) (90g)

  • FOR THE FILLING
  • 3 oz Fat Free Condensed Milk

  • 3 oz Low-Fat Cream Cheese

  • 4-5 Key Limes

Directions

  • Preheat oven to 350F.

  • Let cookies cool on the baking sheet for 10-15 minutes. Once cooled move to a wire rack.

  • This batter is EXTREMELY wet, You’ll need to use a scooper or a spoon to scoop it into the graham cracker crumbles.
